The Wellhouse
When Wilhelm Victor Keidel arrived in Fredericksburg in 1847 as the settlement’s first physician, this site was still a working farm, and Austin Street marked the edge of the Texas frontier. For German settlers carving a life from the rocky hills of the Texas Hill Country, water drawn by windmills and stored in simple wellhouses was essential to survival. These humble stone and wood structures became natural gathering places, sources not only of sustenance, but of stories.
By the time his great-grandson Albert Keidel began his work as an architect and historic preservationist in the 1930s, the wellhouse had come to symbolize perseverance, community, and stewardship of the land. Today, the Keidel family’s historic wellhouse remains central to the Albert Hotel and serves as the inspiration for our restaurant. At The Wellhouse, we honor that pioneering spirit, carrying forward a tradition of care, hospitality, and honest Texas craftsmanship.
